2016 Week 48

We had an awesome week in Breckenridge with my family for Thanksgiving.
Lots of easy, yummy food was made and eaten,
lots of Pie Face was played,
and lots of laughs were had.
And the week even culminated with a big Buff win!
Now we're home today to get ready for the week ahead and cheer on the Broncos tonight.

And I'm starting a big challenge this month.
The Whole30.
No alcohol, no sugar, no dairy, and no grains for the next 30 days.
It certainly scary to write that down, even if no one reads this blog!
I am going to be eating a whole bunch of veggies, eggs, fish, and fruit this month.
My plan is to make one dinner for everyone that is Whole30 compliant
and then add in something like rice or a grain for the family.
Here's to hoping! 

Dinners this week:
Sunday - Spaghetti and meatballs, salad and garlic bread, and fruit.
Monday - Zucchini and Sweet potato latkes with spicy tilapia.
Tuesday - Pesto salmon with veggies in foil.
Wednesday - Grilled veggies with two veggies and a fruit.
Thursday - One pan blackened cod with zucchini and sweet potatoes.
Friday - Shrimp and greens for me, probably pizza for the family.
Saturday - Tuna cakes with a green salad and avocado.

2016 Week 46

It's been a tough week emotionally.
We all needed some time outside and unplugged.
Luckily, the weather agreed. 
It's been a hot October and November here so far,
but I heard snow is coming Thursday. 
We'll see.

I have been loving a new cookbook I discovered and many recipes from this week are from it.
The book it Run Fast, Eat Slow and the recipes are amazing. 
It's one of the first cook books that I've found that really follows my food philosophy,
which is real food (including fat) and lots of veggie and fish options.

Dinners this week:
Sunday - Gumbo with friends after the Bronco game.
Monday - Eat out for the school.
Tuesday - Salmon cakes and artichokes.
Wednesday - Quinoa risotto with zucchini and fresh bread.
Thursday - Veggie fried rice with shrimp.
Friday - Homemade pizza night.
Saturday - Dinner out.

2016 Week 45

This toothless wonder is growing up too fast!

Dinners this week:
Sunday - Tofu and veggie fried rice.
Monday - Sausages, mashed potatoes, and roasted broccoli.
Tuesday - Election night! Bipartisan pasta (green pesto sauce or red tomato), patriotic fruit salad, green party veggie side, and red white and blue jello for dessert!
Wednesday - One pot creamy, spinach lentils and fresh baked bread.
Thursday - Taco thursday! Cilantro lime vegan tacos anyone?
Friday - Friday night, pizza night!
Saturday - Dinner out with friends.

2016 Week 44

Dinners this week:
Sunday - Dinner at a neighbor's Halloween party.
Monday - Easy pumpkin pizza and salad before trick or treating!
Tuesday - Dinner out (it's for the school!!).
Wednesday - Pesto pasta with shrimp and cherry tomatoes.
Thursday - Mom's going out, so it's taco Thursday for the family (and go Buffs!).
Friday - Homemade pizza night!
Saturday - Grilling out.

2016 Week 43

We had a wonderful time at the Rock Creek Pumpkin Patch this week.
Our front porch is full of beautiful gourds now and
the season of Autumn is in full swing.
 The kids had yummy (giant) pumpkin cookies, 
 and measured how big they are growing,
(I have one of these pictures from every year)
 and our little vehicle obsessed boy was able to "drive" some big tractors.
I love the traditions of this season.

Dinners this week:
Sunday - Leftover chili from the cook off yesterday. (PS, Scott took 3rd place with his smoked pork green chili.)
Monday - Monday night football with the Broncos!! Fried chicken and leftovers. Hehe, we still have tons of chili left.
Tuesday - Taco Tuesday, the kids' favorite night of the week. I'm getting tired of it though, so I'm looking for a yummy veggie taco recipe.
Wednesday - Veggie lasagna (from the freezer).
Thursday - YMCA halloween party, I'm making butternut squash mac and cheese with veggies for an early dinner.
Friday - Campfire with friends at a nearby farm. We will have an easy takeout pizza dinner before hand.
Saturday - Dinner out after the fun Monster Dash family run.

2016 Week 42

Autumn is gorgeous around here right now.
We're enjoying the season in all the traditional ways;
jumping in leaves and eating all things pumpkin and apples!

Dinners this week:
Sunday - Leftovers
Monday - Shrimp pasta with lemon and butter.
Tuesday - Taco Tuesday, naturally.
Wednesday - Lasagna roll ups.
Thursday - Roasted salmon, potatoes and green veggies.
Friday - Homemade pizza and movie night. I'm thinking a spinach and artichoke with a white garlic sauce for the adults. Yummy!
Saturday - Chili cook-off at a friend's house. We are still figuring out our award winning recipe!
