Week 9

Well, we are moved and the unpacking has begun!  It's so much work, but we need a little normalcy and I need to get to the grocery store, so my priority this week is to have dinners lined and ready to roll.  My goal this week, no more 5pm calls to Scott asking him for ideas for dinner!

Chili and Cornbread with a side of something green
Corn and Potato Chowder with a salad and french bread
Quesadillas with all the fixins!
Baked Macaroni and Cheese Cupcakes - maybe something L will like, I'll get him to help me in the kitchen

Week 7

It's moving week!  I'm trying to be on top of things, so I've got some dinners made and in the freezer.

Grilled Cheese and Tomato Soup
Veg Lasagna
Corn and Potato Chowder
Stuffed Shells
Pizza

Can't wait for next week to figure out what to make in our new kitchen!

Week 6

We are moving in T-2 weeks, so it's game on here!  For that reason, meals are easy, and using much of what we already have (less to move!).
Black bean natchos
Spaghetti and Tomato Sauce with Veggie Crumbles
Veg Lasigna
Ham and Cheese Roll Ups (dad's on duty, can you tell!)
Beet Salad for a fun Valentine party

The BEST high altitude chocolate chip cookIes!

Here in Denver, we have gotten used to home made chocolate chip cookies being flat, flat, flat.  I think I've finally found a keeper though.  These are so good that, I've made them three times over the past three weeks!!  We are eating far too many cookies are here, but can't help it, they are so chewy, chocolately good!

High Altitude Chocolate Chip Cookes
1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
3 eggs
2 tsp. Vanilla Extract
3.5 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
12 ounces chocolate chips

Cream butter and sugars.  Add eggs one at a time.  Add vanilla and mix.  Combine flour, baking soda, and salt in small bown and add to wet mixture in thirds.  Don't over mix.  Fold in chocolate chips.  Bake at 350º for 12-15 minutes (14 at our hosue!).  I

I find they are chewy-er when we make them a bit bigger!

Week 5

5º.  That's the high for Tuesday.  I'm in the mood for soups and baked pastas that will keep us all warm!

Grilled Cheese and tomato soup - another fav.  It's a good Monday dinner for us!
Veg Tortilla Soup - I haven't found a recipe yet, but I'll let you know what I use.
Stuffed Shells again.  Made these last week and everyone loved them.  It was an easy dish to make ahead and have Scott bake when I'm out.  I think I'll add some frozen spinach this time for a little green.

Brown Rice Pilaf this is from Mark Bitman's blog and looks like a yummy, veg dinner

Whole Wheat Blueberry Muffins - I actually made these last week and they were so delicious that I'm doing it again this week!
