2015 Week 41

Fall is such a fun time,
with tons of parties,
great (pumpkin) foods,
and friends.

Dinners this week:
Sunday - Dinner at a pumpkin carving party with friends.
Monday - Dinner out with my dad in town.
Tuesday - Veggie stir fry with tofu, fruit on the side.
Wednesday - Spiced lentil soup with squash, fruit and naan on the side.
Thursday - Shrimp tacos with rice and beans.
Friday - Homemade pizza and a Halloween movie night.
Saturday - Happy Halloween! Dinner and trick or treating with friends.

2015 Week 40


You know it's a good weekend when you return home dirty, smelling of campfire, 
exhausted and smiling. 
We're so lucky to have some great friends who share their 
awesome little piece of heaven with us.

Dinners this week:
Sunday - Chicken noodle soup and veggies.
Monday - Slow cooker minestrone with homemade bread.
Tuesday - Taco night.
Wednesday - Shrimp fried rice and fruit.
Thursday - Butternut squash mac and cheese with a green veggie.
Friday - Homemade pizza night!
Saturday - Fall Harvest party with friends. I'm making this salad and these for dessert.

2015 Week 39

Holy Guacamole fall is beautiful.

Dinners this week:
Sunday - Dinner with friends after the Bronco game.
Monday - Baked ziti with garden greens.
Tuesday - Taco Tuesday! 
Wednesday - Salmon cakes with slaw, fruit, and homemade bread.
Thursday - Easy mac and cheese with butternut squash and a fruit salad on the side.
Friday - Going to the cabin with friends, making spaghetti, meatballs, garlic bread, and salad.
Saturday - Cabin time!

2015 Week 38

 We attended a fall fest in our little town this weekend.
In addition to all the usual activities (pumpkin launch, hamster balls, haunted house, crafts)
there was a bubble machine.
It was this industrial sized thing that created a mountain of bubbles.
The kids had the best time, running in and out of it, 
creating beards and gloves and boots out of bubbles.
So fun.

Dinners this week:
Sunday - Chili and potato wedges with friends after the Bronco game.
Monday - Grilled fish tacos with salad and garden tomatoes.
Tuesday - Tacos!
Wednesday - Spaghetti and salad.
Thursday - Grilling.
Friday - Family photos tonight. Either an easy mac and cheese dinner or grabbing something out.
Saturday - Homemade pizza night.

2015 Week 37

The fall weather has arrived and though the evenings may be short, they are magical.

Sunday - Scott's homemade mac and cheese with veggies and fruit.
Monday - Leftovers.
Tuesday - Veggie stir fry with udon noodles, served with fruit.
Wednesday - Lentil and butternut squash curry with naan and fruit.
Thursday - Grilled fish tacos.
Friday - Homemade pizza.
Saturday - Spaghetti, garlic bread, and green veggies and salad.

2015 Week 36

Our sweet girl had such a fun birthday week.
She requested a rainbow cake (again) and I wanted to do something different.
I found the idea for this baby on Pinterest (of course) and it was a hit!!

Dinners this week:
Sunday - Easy mac and cheese and garden veggies.
Monday - Ribs, mashed potatoes and sauteed zucchini.
Tuesday - Taco Tuesday! Always a hit!
Wednesday - Grilled salmon, brussels sprouts, bread.
Thursday - Sweet potato hash with a fruit salad, yum!
Friday - Pizza night (dinner out for me!)
Saturday - Grilling burgers and veggies.

Pumpkin Nutella Muffins (High Altitude, Whole Wheat, Low Sugar)


The start of school around here means fall,
and for me, fall means baking with pumpkin. 
These Pumpkin Nutella Muffins hit the spot on a Sunday morning.

Ingredients: 
1 cup whole wheat pastry flour
1 cup all purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1 cup Pumpkin
1 egg
1/2 cup whole milk
5 Tbs butter, melted
1/4 cup packed brown sugar
Nutella

Directions:
1. Mix all the wet ingredients together in a bowl with a wooden spoon.
2. Add all dry ingredients to bowl and mix well.
3. Spray the muffin tin or add muffin liners and divid dough (we usually get 11 muffins).
4. Take a baby spoon and add a dollop of Nutella to the top of each muffin. Then take a toothpick and swirl the Nutella into the muffin dough.
5. Bake muffins at 375ยบ for 18-20 minutes.
6. Let cool and enjoy.
