2015 Week 17


We spent a fun filled weekend in Breckenridge.
Lots of swimming, sledding, swimming, and eating!
It was perfect.

Dinners this week:
Sunday - Green curry and brown rice.
Monday - Homemade tomato soup and grilled cheese.
Tuesday -Fish tacos with coleslaw.
Wednesday - Grilled salmon, corn on the cob, peppers and brown rice.
Thursday - Homemade mac and cheese with roasted broccoli and fruit.
Friday - Dinner out for a good friend's birthday.
Saturday - Derby day party with friends.

2015 Week 16

This little one got a new dress and sandals this weekend.
The temps aren't cooperating, but she's ready for summer!

We're heading up to Breck this weekend and it should be a fun time.
The slopes are closed and it's not warm yet, so it's a strange time to go
but we are looking forward to spending lots of time in the pools and hot tubs,
playing games and sledding.

Dinners this week:
Sunday- leftovers
Monday-fish tacos
Tuesday- Curry with tofu and veggies, served with naan
Wednesday-chicken with pasta and salad 
Thursday-dinner in Breck, pizza and salad
Friday- dinner out in Breck 
Saturday- dinner in Breck, spaghetti and garlic bread

Mile High Morning Muffins


 These hearty muffins are full of fruits, veggies, nuts and seeds.
They are perfect for breakfast on a school morning, or a cool morning, or after school, or after dinner.
Basically, they are perfect for anytime!

Let's get started:

Preheat the oven to 375°F. Lightly grease a 12-cup muffin tin, or line it with papers and spray the insides of the papers.

In a small bowl, cover 1/2 cup raisins with hot water, and set them aside to soak.

Core one large apple and about three carrots and pulse them in the food processor until they are finely chopped.

Next, stir together the following in a mixing bowl:

1 cup whole wheat flour
1 cup all purpose flour
1/2 cup brown sugar
1 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt

Drain the 1/2 cup raisins and add them to the bowl, along with the chopped apple and carrots, plus the following:

1/2 cup unsweetened shredded coconut
1/4 cup sunflower seeds
1/4 cup chia seeds

Stir to combine.

Whisk together the following:

3 large eggs
1/3 cup melted butter
1/3-1/2 cup apple sauce (I used an apple carrot baby food pouch)
2 teaspoons vanilla extract

Add to the flour mixture, and stir until evenly moistened. You’ll have a fairly loose (though chunky) batter.

Divide the batter into the 12 muffin cups, fill the cups generously to get a nice rise on the muffin.

Bake for 25-28 minutes. Let the muffins cool in the pan for 5 minutes, then on a rack.

They are delicious warm or room temperature and my kids loved them for snacks after school on a rainy Thursday. Enjoy!

2015 Week 15

The warm weather keeps on rolling in!

Dinners this week:
Sunday - Leftovers
Monday - Salmon and veggies on the grill.
Tuesday - Leftovers.
Wednesday - Fish sticks with green veggie and fruit.
Thursday - Homemade mac and cheese with green veggies and fruit.
Friday - GNO for me (yay!!), kids are having dog and corn on the grill.
Saturday - Take out pizza for the kids, Scott and I have a school auction dinner to attend.

2015 Week 14

Here's a cute Easter picture, 
to take away from the fact that there was absolutely no mean plan this week.
It was spring break here,
and each day I had at least one sick kid.
I'm ready for a Spring Break Do-Over!
We ate a lot of leftovers, pizza, and grilling. 
I'm definitely ready to move forward.

2015 Week 13

It's going to be a fun week of Easter fun
beginning with our town's egg hunt today.
I'm rounding up some friends for this flashlight egg hunt over the weekend.
How fun does that look?

Sunday - Grilling with friends.
Monday - Girls Night Out! Green noodles and fruit.
Tuesday - Easy dinner out.
Wednesday - Fish sticks with a green veggie and fruit.
Thursday - Butternut squash mac and cheese with green veggies.
Friday - Dinner with friends before our flashlight egg hunt!
Saturday - Something easy, maybe leftovers, before our big Easter brunch.
