2013 Week 1

Wowza! The first post of 2013 (even though it's not technically 2013 yet...).  
I'm proud that I stuck to my resolution last year and planned our dinners nearly every week.  It's definitely a habit now and I find our whole week becomes very unorganized if I don't have things planned out on Sunday.  

Here's how we're ending 2012 and beginning 2013:
Sunday - Scott and I will be at the Broncos game (go donkeys), so the kids and sitter are having pizza.
Monday - New Years Eve dinner of spinach and artichoke cheese fondue with lots of veggies and bread for dipping.  Maybe this for dessert!
Tuesday - We always have hoppin' johns on New Years Day, I made these last year and they were fabulous.  Making it again this year.  We usually have our hoppin' johns with Virginia ham and biscuits.
Wednesday - Corn and potato chowder with fresh bread.
Thursday - Leftovers!
Friday - Easy pasta dinner
Saturday - Chili and cornbread

2012 Week 52

I cannot believe how quickly this week, month, year has gone by.
It's so hard this time of year to stop and appreciate all that we have,
 but I'm really going to try to do just that.

Sunday - breakfast for dinner!
Monday - a Christmas Eve dinner with my family, veggie lasagna will be the veg main dish
Tuesday - a simple Christmas dinner with just the four of us. Stuffed pork chops for Scott, cheesy polenta and mushrooms, broccolini, homemade rolls and little chocolate lava cakes for dessert.
Wednesday - leftovers
Thursday - cheese and chili tamales 
Friday - leftovers again, or something easy like spaghetti.
Saturday - dinner with friends

2012 Week 51

We are home from our amazing vacation and now thrust back into the real world.
I can't believe how much can change in the world in a week, 
and how strange it feels to be out of it for so long.
Christmas is coming and we have a ton to do to be ready, lots of fun things, but our focus is renewed and we are going to spend time enjoying the feelings of the holiday, not the rush.

For dinners this week:
Sunday - pizza after the longest set of flights ever.
Monday - Chili and cornbread
Tuesday - We are decorating our tree tonight, so I'm making homemade spaghetti sauce with a big salad and cookies for decorating after.
Wednesday - Corn and potato chowder and fresh bread.
Thursday - Taco night!
Friday - Swim team holiday party, I need to come up with a yummy dish to bring.
Saturday - My best friend's birthday party, pizza and a sitter for the kids!

2012 Week 49

How it can be December and 60ยบ+ in Colorado is beyond me.
This certainly wasn't happening when I was growing up here.
But these sunsets were, and never fail to impress.

Our week is mellow, but we leave Saturday for a big family vacation so there's a lot to get done.
Sunday - Leftovers or dinner out with friends.
Monday - Kitchen sink quesadillas, trying to use up items in the veggie drawer!
Tuesday - Grilled fish and an orzo dish on the side.
Wednesday - Meatballs and mashed potatoes for the family while I'm coaching.
Thursday - Kids choice, no clue yet, but I'm sure they will come up with something good!
Friday - Probably pizza or eating out while packing frantically. 
Saturday - Vacation time! Dinner on the plane, and lots of packed snacks.
