2014 Week 4

Just a few shots from our week.

Dinners this week:
Sunday - Leftover orzo and spinach soup from the freezer and fresh bread.
Monday - It's going to be cold!  I'm going to try this red beans and rice recipe, with a sub for the bacon. Served with a green salad or veggie.
Tuesday - Baked ziti with a green veggie.
Wednesday - Some sort of chicken (fish for me) with a couscous salad.
Thursday - Lentil, kale, and potato soup served with fresh bread.  Scott's not wild about lentils, but this looks very tasty.  Maybe he'll come around...
Friday - Homemade pizza!
Saturday - Dinner out or kitchen sink quesadillas.

2014 Week 3

I couldn't even get a menu done yesterday because we were in prep mode for the big game.
 Our game day tradition at this time is for everyone to get on their orange and blue
and eat sprinkled donuts.
Hey, don't knock it until you've tried it!
They won, didn't they?
Go Broncos, go!
We did our part.

Dinners this week:
Sunday - Pulled pork sammies, coleslaw, and sweet potato fries for the big game.
Monday - Leftovers, we have a lot!
Tuesday - Pesto noodles and a fruit salad.
Wednesday - Enchiladas, with red rice and a green veggie.
Thursday - Spicy fish taco bowl, and quesadillas for the kiddos.
Friday - Homemade pizza.
Saturday - Homemade mac and cheese and a green veggie, or eating out.

2014 Week 2

Oh man...
Don't you just love babies cheeks?
Especially big babies with their mushy, squishy baby cheeks?

We managed to make just about everything on our menu last week.
Which is impressive.
I think the key was definitely that we kept everything simple.
(And that Scott left work early every day!)

Dinners this week:
Sunday - Scott's cooking, and it's game day.  Something tells me that if the Broncos win, it'll be yummy celebration food.  
Monday - Asian Salmon and Noodles
Tuesday - Taco Tuesday.  My favorite chipotle sweet potato and black bean tacos and cheese quesadillas for the kids. 
Wednesday - Corn and potato chowder with fresh bread and a green salad.
Thursday - Chicken (for kids and Scott) and pesto noodles.  Some sort of protein for me.
Friday - Homemade pizza and family movie night.
Saturday - Dinner out.

2014 Week 1

Wow.  I'm sure we're all thinking it, 
but I can't believe it's a new year already!
We are settling in with our new baby
and learning about life in a family of five.

The kids are back in school this week and Scott is back at work
so my goal is to have plenty of food ready to go for dinners.
I'm planning easy, yummy foods that everyone will eat and anyone can make.

Dinners this week:
Sunday - Homemade pizza, a family favorite.
Monday - Chili and cornbread and a green veggie.
Tuesday - Slowcooker veggie soup with homemade bread.
Wednesday - Slowcooker bean, spinach, and cheese enchiladas with a salad.
Thursday - Homemade mac and cheese with a green veggie.
Friday - Take out to celebrate making it through the week!
Saturday - Baked pesto fish, a big salad, and cous cous.
