2012 Week 48

Well, our Thanksgiving feast was a success!  The veggie dishes were amazing and Scott made his best turkey yet (on the grill!).  I'll be sure to save those tasty dishes for next year.
Here is H and my cute little niece in their matching turkey shirts!

Now it's back to the grind...
Sunday - Scott's making turkey noodle soup for himself, the kids, and his parents.
Monday - Dinner out/at a friend's house as we juggle kids, coaching, and taking Scott's parents to the airport.
Tuesday - Dinner frittata with whatever veggies and cheese is left from last week.
Wednesday - Chili and corn chowder with fresh bread and a green veggie.
Thursday - Green noodles and milk (L chose this one).
Friday - Tofu and veggie stir fry.
Saturday - I have my swim team's first meet, so Scott and the kids are on their own, probably pizza!

2012 Week 47

Such a fun and busy week is ahead of us.  We have family coming into town, Scott's birthday and Thanksgiving all rolled into 7 short days!


Here's our dinner plan for the week...
Sunday -  Birthday Parties galore for L, which means Scott and H are eating leftovers!
Monday - Mummy dogs or veggie fried rice.  It's up to Scott, he's cooking!
Tuesday - In-laws arrive in time for dinner.  I'm doing a crockpot veg lasagna that will be ready whenever they get in. With fresh bread and a green salad on the side.
Wednesday - Scott's birthday and his sister and her family arrive.  The Birthday Boy has requested grilled steaks.  I'm thinking a yummy salad and a light fish too.
Thursday - Turkey Day! Check out our plan for dinner here.
Friday - My sister and her family are coming up to have dinner with everyone.  I'm thinking a big easy spaghetti dinner with meat sauce and veg sauce, lots of noodles, a fresh green salad and garlic bread.
Saturday - Dinner out with Scott's parents

Veggie Thanksgiving Dinner Plan

Thanksgiving is less than a week away and it's time to really get down to planning dinner!  We're pretty traditional over here.  This year we have family coming to our house, so Scott is cooking a turkey and my mom is making the veggie main dish.  I get on a little bit of a high horse during the holidays and refuse to just eat sides for dinner!

Here is our plan for Thanksgiving Dinner:
Appetizers:
Turkey Veggie Tray
Apple, Brie, and Honey Brushetta

Dinner:
Sweet potato & Arugula Salad
Mushroom & Veg Dressing
Mashed Potatoes
Chopped Brussel Sprout Salad
Dinner Rolls
Cranberry Relish
Veggie Shepard's Pie
Turkey!

Dessert:
Carmel Apple Pie
Pumpkin Pie

2012 Week 46

I cannot fathom that next week is Thanksgiving.  
There's still dinner to plan, crafts to make, table decorations to buy and set up.
Whew!  An exhausting list for sure.
Obviously we'd rather just relax!

Dinners this week are easy, we're saving all of the 'real' cooking for next week!
Sunday - Veg French Onion Soup
Monday - Spaghetti 
Tuesday - Baked fish and potatoes with a green veggie
Wednesday - Black bean spinach enchiladas with red rice
Thursday - Farro risotto with beans and basil
Friday - Ladies night out for me (maybe a twilight movie, maybe not!) so I'll pick up a pizza for Scott and the kids.
Saturday - Birthday parties for the kids to go to and a CU game for Scott, dinner will be out.

2012 Week 45

It is weird that I'm still obsessed with baking with pumpkin?  I've made pumpkin scones, cookies, muffins, bread and I still keep catching myself pinning new recipes to try.  Mmmmm, pumpkin!  
The latest find is a pumpkin swirl loaf with a chocolate filling.  It sounds so yummy.
What else should I try?  What am I missing from my pumpkin baking collection?

On another note, here's our dinner plan for the week.  It's an uneventful week except that four of the nights I am coaching, so our dinners are pretty simple.
Sunday - Grilled chicken and roasted squash for S and kids
Monday - Tofu and veggie stirfry with soba noodles
Tuesday - Grilled fish and veggies
Wednesday - Some sort of baked pasta dish, maybe stuffed shells again
Thursday - Taco night, maybe those great sweet potato and black bean chipotle tacos
Friday - Pizza for S and kids
Saturday - Dinner out with my sis and her family
