2013 Week 52

Baby is here!


Everyone is healthy and so happy that baby C have finally arrived.
Which means very little cooking for me this week.
But, it seems the other people in the house still want to eat?!?!
So, there are still dinners to be planned.

Dinners this week:
Sunday - Chili and cornbread.
Monday - Veggie Lasagna made by a dear friend.
Tuesday - Something super easy, maybe homemade pizza (in a Christmas tree shape).
Wednesday - Merry Christmas! We're having prime rib, mashed potatoes, salads and greens, with cheesecake for dessert.
Thursday - Leftovers.
Friday - Kitchen sink quesadillas.
Saturday - Take out or dinner at my sister's on my dad's last night.

2013 Week 51

H's preschool class makes ornaments this time of year and then they
have a "field trip" and walk 2 blocks to the town tree to hang their masterpieces.
I love the colors.

No baby still.
Just waiting.

Dinners this week:
Sunday - Homemade veggie chili with all the toppings.
Monday - Black bean tostadas with cilantro sauce, yum!
Tuesday - Veggie stuffed shells.  I usually do a spinach/ricotta combo.
Wednesday - Baked fish, green veggies, and an orzo salad.
Thursday - Last day of school for the kids, maybe a snowman celebration dinner.  Although, the best snowman meal I can think of now is snowman pancakes!  
Friday - Creamy spaghetti with salad and garlic bread.
Saturday - Pizza at home.

2013 Week 50

A sweet reminder to our two little naughties this week.
Dinners this week:
Sunday - Leftovers, or nachos.  
Monday - Roasted mushrooms with creamy polenta.  Not really one of the kid's favorite dishes, but so warm and yummy. Served with a green veggie.
Tuesday - Some sort of chicken and twice baked broccoli and cheese potatoes.  
Wednesday - Sweet potato and black bean enchiladas.  
Thursday - Broncos on Thursday night football, we're having homemade mac and cheese and a big salad.
Friday - The kids will be at PNO, so Scott and I are going out to dinner on our own.
Saturday - Homemade pizza, or dinner out!

2013 Week 49

Our elf arrived this morning! 
I can't believe it's already December
and along with a new baby coming
the month is filled with the usual busy holiday events.
Here's to hoping we can keep up!

Dinners this week:
Sunday - Leftovers, we have a ton to use up still!
Monday - Stir fry, using up veggies on hand, with rice.
Tuesday - Some sort of noodle dish, either spaghetti or something creamy with veggies.
Wednesday - Chili and cornbread.
Thursday - Breakfast for dinner.  Maybe eggs, pancakes, and smoothies.  Easy and yummy.
Friday - H's holiday dance show, so an easy crockpot soup will be simmering at home for us.
Saturday - Pizza after the preschool holiday party.

2013 Week 48

I'm thankful that's just a photo of a polar bear! 
It's Thanksgiving week!  
You can check out our menu here, we are all getting excited for the big meal.
We have Scott's parents coming in this week and the kids cannot wait for
Grandma and Grandpa to get here.
Honestly, everyday they ask if this is the day they arrive!

Dinners this week:
Sunday - Let's go Broncos, game day food.  Burgers, soup and sweet potato fries, all homemade.
Monday - Quesadillas and burritos, with all of the toppings.
Tuesday - My in-laws arrive around dinner time.  I'm thinking of making my butternut squash stuffed shells with and a big salad.
Wednesday - We don't really have any traditional "day before thanksgiving dinner" recipes or plans, but we need some!  Seems like many people do pizza or Chinese food.  I'm not sure which route we will do yet.
Thursday - Woohoo! It's Turkey day!
Friday - Leftovers, of course!
Saturday - Dinner out with Scott's parents, kids are having pizza with a baby sitter.

2013 Thanksgiving Dinner Menu

This year Thanksgiving will be a little different around here.  I'm about 2 or 3 weeks away from having baby #3 and I'm just not that into cooking a big Thanksgiving dinner. So Scott and his mom and my mom and taking over.  I've planned our dishes, and Scott already has his turkey plan, but that's about as much as I'm going to do.  I'm hoping to just spend the day on the couch "overseeing" what happens in the kitchen!

Here is what our Thanksgiving dinner will be this year:

Appetizers
Honey, Brie, and Apple Bruschetta 
Nuts and Olives
Veggie plate with homemade ranch

Main Dishes
Turkey - I think Scott's grilling the big bird again this year
Roasted Garlic Mashed Potatoes
Turkey gravy & Mushroom gravy
Chopped brussels sprout salad - this was a big hit last year, so good
Delicata squash roasted with gouda - I love delicata squash and what's NOT good about gouda??
Shiitake mushroom stuffing
Crescent Rolls
Cranberry Sauce

Dessert
Maple Pumpkin Pie with Salted Pecan Brittle 
Chocolate turkey cupcakes (for the kids, or the kids at heart)

Drinks
Cranberry Slush for the kids and me - yummy!
Wine, Beer

2013 Week 47

Bad news: I made the mistake of buying a box of cereal with a toy inside this week.
Now the kids know that such a thing is possible, toys in food. 
Good news: The toy was a Chewbacca pen and L drew this for me.  
I love everything about it.  I love the way he spelled mommy and daddy, 
I love the way he drew the dog, I love the sun with a smiley face.  
Honestly, the whole thing kills me.

Dinners this week:
Sunday - Let's go Broncos!  Game day food is on the menu.  Yummy, grilled quesadillas with lots of toppings and lots of fillings.  Peppers and onions, grilled chicken, cheese, and beans.
Monday - Veggie and tofu stir fry with rice.
Tuesday - Easy noodle dish, maybe crockpot spaghetti, or baked penne.  I might try this recipe with a few more added veggies.
Wednesday - Tostadas, I guess that's pretty similar to Sunday's dinner, but I love a crispy tostada!  Thinking black bean and sweet potato combo.
Thursday - Scott's birthday!  It's all his favorites with grilled steak, mashed potatoes and a green veggie.  I'll throw a portobello mushroom on the grill for me.  All this is followed by cheesecake.  Still looking for a great recipe.  I can't get the birthday guy to settle on a flavored cheesecake or traditional one.
Friday - Some sort of shrimp recipe.  Not sure what yet, but the kids and Scott all love shrimp and we never cook it at home!  Any suggestions?
Saturday - Dinner out or grilling with friends.

2013 Week 46

We're in that season where L has a birthday party to attend just about every weekend.
At the one yesterday, the kids all got to scamper up the climbing wall at our rec center.
It was only L's second time on the wall, but he loved it.

In cooking related news, Scott has been making the yummiest pizzas lately.  
We always dig into them before I can take a picture, 
but the best combo is roasted butternut squash, caramelized onions, 
cremini mushrooms with ricotta and mozzarella.
So, so delicious.  We've had it twice in one week!
Here's the pizza dough recipe we're currently loving.

Dinners this week:
Sunday - Chili with cornbread.
Monday - Stirfry with noodles and tofu.
Tuesday - Leftovers.
Wednesday - Butternut squash and black bean enchiladas with cilantro lime rice, yum!
Thursday - Homemade mac and cheese with a green veggie.
Friday - Grilled chicken, veggies, and rice.
Saturday - Dinner out or something easy at the house.

Roasted Butternut Squash Stuffed Shells

A culmination of leftovers resulted in the yummiest of dinners last night;

Roasted squash
I had some leftover stuffed shells stuffing thawed out to use for the night.
On a whim I decided to add in some cubes of roasted butternut squash 
we had left from the night before.
Then, I realized we didn't have enough tomato sauce to bake the shells in,
so I made a quick bechamel sauce.

So, picture this:
warm, chunky tomato sauce on the bottom
al dente large shell pasta stuffed with a mixture of ricotta, spinach, egg, spices and roasted squash
creamy, homemade bechamel sauce and a light sprinkling of mozzarella cheese on top.
Then, you have yourself a seriously delicious dinner!

Here are the recipes I used:
Stuffed shells - usually some take on this
Tomato sauce - this
Bechamel sauce - pop a couple of tablespoons of butter in a pot on medium heat, when melted add the same amount of flour and wisk a few minutes.  Then add about 1.5 cups of warm milk and continue to wisk as mixture thickens.  
Roasted squash - easy, just cube squash, toss with olive oil and salt and pepper and roast covered with foil for 25 min and then uncovered for 20 min at 425ยบ.

2013 Week 45

Happy Halloween from Lego Darth Vader and Rapunzel 
Halloween was busy and so fun.
The kids loved dressing up and the costumes were a hit. 
The mummy dogs and jack o'lantern pizzas were loved by the kids
and overall the day was a success.

Dinners this week:
Sunday - Homemade pizzas.  Cheese and pepperoni for the kiddos and a yummy veggie combo for the adults.
Monday - Creamy Mushroom Fettuccine from this month's Cooking Light mag.  
Tuesday - It's supposed to snow, so slow cooker minestrone soup and fresh, homemade bread are on the menu.
Wednesday - Fish with couscous and a steamed green veggie.
Thursday - Stuffed shells and a big green salad.
Friday - Breakfast for dinner again, waffles and eggs were such a hit/treat last week!
Saturday - Dinner out with friends

Blueberry Breakfast Muffins

We love muffins in this house and I try to find a good combination of
healthy, filling and yummy. 
Blueberry breakfast muffins
This recipe is very quick and easily comes together, taking longer to bake then to prepare.
The kids loved them and I loved using up those overripe bananas that have been sitting on our counter.
It's also easy to substitute ingredients in this recipe.  Applesauce for the butter or eggs, all whole wheat flour, and any fruit can be used in place of the blueberries.  
Anyway, they are awesome, give them a try!

Ingredients:
1/2 c AP flour
1/2 c whole wheat flour
1 c old fashioned oats
1/2 tsp baking powder
1/2 tsp salt
4 Tbs butter, softened
1/2 c brown sugar
2 eggs
2 very ripe bananas, smashed
1/3 c plain yogurt
1/2 tsp vanilla extract
1 c blueberries (fresh or frozen)

Directions:
1. Preheat oven to 375ยบ.
2. Place muffin liners in muffin tin.
3. Combine first 5 ingredients.
4. In another, bigger bowl, combine the butter and brown sugar and stir with a wooden spoon.
5. Add in eggs, one at a time and stir to combine.
6. Add in smashed bananas, yogurt, and vanilla and stir to combine.
7. Add dry ingredients to wet and stir just enough to not see any flour.
8. Fold in blueberries carefully.
9. Drop batter into muffin tins and bake for 22-28 min for regular sized muffins and about 10-12 min for mini muffins.

2013 Week 44

Dress up fun!

Halloween is on it's way and today we're finishing up costume work.

Dinners this week:
Sunday - Chili and cornbread with green beans.
Monday - It's going to be a cold day here, possibly snow.  I'm thinking warm stuffed shells and a big green salad.  
Tuesday - Tuesday taco night.  These pineapple and portobello mushroom tacos look tasty.  
Wednesday - Homemade chicken baked nuggets.  I'm still looking for a recipe.  With greens and a veggie protein for me. 
Thursday - Happy Halloween!  Mummy dogs are on the menu for school lunches.  Then a homemade pumpkin pizza for the kids before trick or treating and a pumpkin soup or salad for the adults (followed by a handful or two of candy!).
Friday - Breakfast for dinner, always a fav!
Saturday - Dinner with friends.

2013 Week 43

Fall fun at the farm!
Dinners this week:
Sunday - Bronco game this evening, game food is on the menu! Scott's making something yummy in the slow cooker with a big salad.
Monday - Fish and greens.
Tuesday - S and I are going out, we have a babysitter for the kids.  They are having pizza and veggies.
Wednesday - Noodles of some sort.  Maybe spaghetti with a big salad and garlic bread.
Thursday - School conferences were moved to this week.  Soup and salad on the menu.
Friday - Friday fun nachos.  On individual plates with all the toppings.
Saturday - Halloween festivities in town and an evening Buffs game mean easy comfort food tonight.  I'm doing a baked potato bar with lots of toppings.

2013 Week 42

Fall is such a beautiful time of year in Colorado.


Not just the fall leaves, but also the sun rises and sun sets.
I took these two photo with my phone one morning this week.
The sun rise was amazing, I felt so lucky to be up early enough to see it!

Dinners this week:
Sunday - Yummy looking veggie lasagna, good Sunday game day food.  
Monday - Quinoa, black bean and corn tacos, yum!
Tuesday - Butternut squash, chickpea and arugula salad.
Wednesday - Grilled fish and greens (pesto tilapia for us, fish sticks for the kids)
Thursday - L's first kindergarten conference this evening, we will need an easy dinner that can be ready at any time.  I'm going to make our favorite veggie corn chowder with fresh bread and a simple salad.
Friday - Fall Festival at school, dinner there.
Saturday - Something easy, dinner with family or pizza night at the house.

2013 Week 41

We had our first snowfall last week!
But now, it's back to the 70's, so we can't complain.  
Love that crazy Colorado weather.

I'm happy to report that dinners last week were a success.
H ate (or at least took a bite of) everything.

This week's dinners:
Sunday - We have friends coming over for the Bronco game.  I'm going to make some yummy game snacks, which will probably turn into dinner.  I'm thinking more pretzel bites with beer-cheese dipping sauce, hummus and veggies, and spicy veggie tortilla soup in the crockpot.  
Monday - Veggie curry with TJ's sauce, and homemade naan.  
Tuesday - Pesto grilled tilapia with a green veggie and brown rice/quinoa side.
Wednesday - Leftovers, or last minute grilled veg quesadillas.  
Thursday - Homemade mac and cheese with a green veggie on the side.
Friday - Soup in the crockpot.  A veggie minestrone probably.  
Saturday - Dinner out or something easy, I have no good ideas!

2013 Week 40

Fall has arrived!
Our pumpkin bounty from the garden.
The cool evenings, crisp days and fall colors are all beginning
to make their appearances this week.  

The changing season is inspiring baking (this and this), 
decorating, and slow cooker soup (this one) making!
All good things.

Dinners this week: (I have a goal of getting our 3 year old daughter to eat dinner this week. The past month or so, she's been happy to go to bed instead of eating dinner.  Here's to hoping she will like some of these dinners!)
Sunday - Game day food.  Nachos with lots of toppings (beans, tomatoes, guac, etc). 
Monday - Homemade fish sticks with an herb dipping sauce and carrot slaw.
Tuesday - Spaghetti with crumbles, sautรฉed garden greens, fresh bread.
Wednesday - Fried rice with veggie chicken.
Thursday - Breakfast for dinner (taking the easy way out, I know).  Pancakes and eggs and bacon, with a fruit salad.
Friday - Slow cooker veggie chili with cornbread.
Saturday - Pasta with broccoli and walnuts.

Any tips for getting a picky 3 year old to eat dinner?

2013 Week 39

Sunday - Scott and I have a wedding in the mountains to attend, so I'm making some stuffed shells for my mom to heat up for the kids.  Using this recipe and adding frozen spinach to the mix.
Monday - Grilled quesadillas.
Tuesday - Slow cooker lentil stew and fresh bread.
Wednesday - Creamed kale and eggs.
Thursday - Sesame noodles with edamame.
Friday - Homemade individual pizzas.
Saturday - Dinner out or grilling with friends.

2013 Week 38

Our sweet girl turns three this week!
I cannot believe it, time flies.

So, birthday celebrations on top of the weather week we've had
(floods, school cancellations, etc) have made for one crazy week.

Dinners this week: (in the hopes that our live returns to normal)
Sunday - Spaghetti dinner with veggie crumbles and garden greens.  With fresh bread.
Monday - Birthday night!  The special girl requested pepperoni pizza and veggies.
Tuesday - Baked potatoes and soup. 
Wednesday - Sour cream enchiladas with black beans and a fruit salad.
Thursday - Grilled or baked salmon with a couscous salad.
Friday - Stuffed shells.
Saturday - Dinner out, or grilling.

2013 Week 37

Let's go Broncos!
We had a little lawn bowling going on before the game.
With very intense placement measuring to see who was closest.
And Scott whipped up this football pizza with bacon (we were our of pepperoni). 
The kids loved every minute of playing and bite of pizza,
never mind the fact they were in bed before the game started!

Dinners this week:
Sunday - Grilling.  Dogs and burgers, garden veggies and corn.
Monday - Peanut noodles with veggies and tofu.
Tuesday - Grilled salmon and homemade caesar salad.  
Wednesday - Panini night, with chips and fruit.  
Thursday - Taco night, using veggie crumbles and all the fixin's.  
Friday - Homemade pizza on the grill.
Saturday - Dinner out or grilling with friends.

2013 Week 36

Sunday - Game food, wings and hot dogs, veggies and dip, chips and guac.
Monday - Homemade grilled pizza and a yummy pear and gorgonzola salad.
Tuesday - Leftovers.
Wednesday - It is still a million degrees here, so I'm thinking cold salads.
Thursday - Go Broncos! We are grilling out, yummy veggies and burgers.  I'm going to try a new veggie burger recipe.
Friday - Pot luck for L's kindy class.  We are going to bring a greek tortellini salad that people always love and something sweet.
Saturday - Dinner with friends, still looking for a yummy salad to bring.

2013 Week 35

We made it!
 Through the start of preschool,
 one full week of full day kindy and scooter/bike accidents,
and full blossoming independence.  

I think we're all enjoying being back in the routine of the school year.
I'm still a bit stressed on the mornings that I have to pack lunches for both kids, snacks,
and feed and dress everyone, but so far we're making it out of the house on time!
We'll see how next week goes!

Dinners this week:
Sunday - Chili rellenos (we didn't get to them last week) with rice and beans and greens.
Monday - Grilled salmon, potatoes, corn, with a salad.
Tuesday - Slow cooker summer veggie stew with homemade bread.
Wednesday - Green noodles, fruit salad and fresh bread.  Grilled chicken for Scott.
Thursday - My dad's here, maybe dinner out.
Friday - Rockies game, hot dogs and nachos for all!
Saturday - Family wedding out of town!

2013 Week 34

We had such a fun weekend in Winter Park!

 and a beautiful drive home along Trail Ridge Road.

It was such a fun start to my birthday week!

Dinners this week:
Sunday - Something easy at home after traveling, probably grilled quesadillas.
Monday - We are in need of some veggies tonight, I'm thinking a big salad and cold veggie dips as everyone detoxes from the weekend!
Tuesday - My birthday!  No cooking for me, Scott's in charge.
Wednesday - Back to School night, an easy pizza and salad dinner here.
Thursday - Easy pasta; green noodles and fruit salad.
Friday - Roasted hatch chilies are in season, so we are having homemade baked chili rellenos.
Saturday - Grilling with friends.

2013 Week 33

Ack!  It's a big week here.
The first day of Kindergarden for the big man (tears, many tears for mom).
The little dude himself is excited to begin,
with his new backpack, new school supplies, and new lunchbox.

Dinners for this week:
Sunday - Grilled steak and other yummy veggies.  I think I'll make this salad again, it was the perfect summertime salad.  Or this, which looks amazing!
Monday - Green noodles (pesto) with fruit salad.  I might try this pesto recipe.
Tuesday - Fish tacos with slaw and beans on the side.
Wednesday - "Night before first day of school dinner."  L planned this one with me.  We are having make your own pizzas with lots of fun toppings and homemade dough.  
Thursday - Kid favorites, mummy dogs, green veggies from the garden and fruit.
Friday - We are headed our of town for the weekend.  Dinner in the mountains, probably our favorite pizza place.
Saturday - Cooking in the condo, spaghetti, green salad and garlic bread.

Our big man learned to ride his bike this past week!
So on Sunday we did our first family bike ride to his new elementary school.

Sunday - Leftovers, we've got a ton of random things filling up the fridge!
Monday - Spaghetti with garlic bread and a big green salad.
Tuesday - Grilled salmon and hot dogs, green veggies.
Wednesday - Veggie frittata, we have lots of eggs to use.  With homemade hashbrowns and a fruit salad.
Thursday - Some sort of easy pasta salad with veggies and a grilled protein.
Friday - Homemade pizza with garden veggies.
Saturday - Dinner out, or grilling while the guys camp in the back yard.

Another fun week of summer down!


Dinners this week:
Sunday - It's raining here today, such a welcome change from the 90ยบ temps, so we are making an easy summer minestrone soup and homemade bread.
Monday - Grilled chicken or black bean burgers with this zucchini gratin.
Tuesday - Grilled salmon and kale salad.
Wednesday - Creamy southwest pasta with a side of greens.
Thursday - Preschool social night, so we will have an easy, early dinner of grilled quesadillas.
Friday - Homemade pizza night!
Saturday - Dinner out with friends.

2013 Week 30

Breckenridge was so beautiful this week.
 The weather was perfect, warm but not hot.
The resort was so much fun with seven pools and hot tubs, mini golf, and trails.
And of course, town was lovely.  
Such a fun, fast getaway!

Meals this week:
Sunday - My Grammie is in town this week, so we are having a family dinner at my mom's tonight.  Scott's grilling flank steak and salmon, corn on the cob.  I'm making an avocado and black bean salad, and cutting up a giant watermelon.  Should be a fun time!
Monday - Food trucks with friends.
Tuesday - Peanut noodles with baked tofu and garden greens.
Wednesday - Grilled quesadillas with guac.
Thursday - Leftovers.
Friday - Green pesto noodles with cherry tomatoes and homemade bread.
Saturday - Homemade pizza, Scott has been rocking this lately, making the best pizzas!

2013 Week 29

We took a fun family hike this weekend in Eldorado Canyon.
The little man did the whole thing without one complaint!
The little lady complained the whole time from the carrier.
It started to pour on us about half way through and we were pretty soaked by
the time we got to the car.  Nothing a little ice cream couldn't solve!

Dinners this week:
Sunday - I'm heading to Breck with the kids and my mom, Scott's on his own!
Monday - Dinner out in Breck.
Tuesday - Breakfast for dinner, either zucchini pancakes or zucchini frittata. 
Wednesday - Peanut noodles with tofu, this was so good last week!  Fruit salad on the side.
Thursday - Tortellini salad and hot dogs for the kids.
Friday - Homemade pizza.
Saturday - Grilling with friends.

Zucchini Mini Muffins

We came home from vacation to find ourselves
the proud owners of a GIANT zucchini.
Since the kids love zucchini muffins I set out to find a yummy recipe.
I found a few and adapted them to this and they tuned out great!

Zucchini Mini Muffins

160 grams all-purpose flour (about 1 1/3 cups)
1/2 cup packed dark brown sugar
3/4 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground allspice
2/3 cup shredded zucchini (about 1 medium zucchini, I did NOT squeeze out the water)
3 tablespoons canola oil
2 tablespoons butter, melted
2 tablespoons orange juice
1 teaspoon vanilla extract
1/4 cup apple sauce

1. Preheat oven to 400°.

2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (through allspice) in a large bowl. Combine zucchini and next 5 ingredients (through apple sauce) in a small bowl; stir with a whisk. Add zucchini mixture to flour mixture, stirring batter just until combined. Divide batter evenly among 24 miniature muffin cups coated with cooking spray or use muffin liners. Bake at 400° for 10 minutes or until a wooden pick inserted in center of muffins comes out clean.

Sunday - Just back from our trip.  After car food all weekend, Scott and I had a big salad and the kids had quesadillas and tomato soup.
Monday - More salad with fresh garden veggies and Scott is grilling flank steak.
Tuesday - Peanut noodles with tofu.
Wednesday - Slow cooker veggie stew with summer veggies and fresh bread.
Thursday - Grilled corn, black beans and sweet potato tacos.
Friday - Homemade pizza.
Saturday - Leftovers or dinner out!

2013 Week 26


We are packing up the car and heading to the great North West this week.  
We don't leave until Saturday and already I'm feeling the need to plan and pack!  


Menus this week:
Sunday - Grilled salmon, mashed potatoes, sautรฉed salad greens and homemade bread.  All thanks for Scott, such a good summer dinner.
Monday - Spaghetti with salad and garlic bread.
Tuesday - Who knows, maybe food trucks, or maybe quesadillas on the grill.
Wednesday - Corn and black bean salad, ham rollups.
Thursday - Breakfast for dinner.  Whole wheat banana pancakes and eggs.
Friday - Easy dinner before leaving early the next am, probably pizza.
Saturday - Dinner out while road tripping.

Here's what I'm packing for our road trip -

2013 Week 25

We had a fun Father's Day with mini golf, skee ball, and a lunch out.
Our kids are so lucky to have such a great dad!

Meals this week: (side note, I am REALLY going to try to stick to cooking at home this week.  It's a mini goal.  We've had a lot of take-out lately and that needs to stop!)
Sunday - Cheese, crackers and fruit.  A mini dinner!
Monday - Pesto noodles with grilled chicken.
Tuesday - Grilling mushrooms, steak, and corn after the tball game.
Wednesday - Veggie fried rice.  
Thursday - Tortellini pasta salad and fruit.  
Friday - I'm eating out with a friend, so the family will be grilling dogs and burgers.
Saturday - Homemade pizza on the grill.

2013 Week 24

This morning called our for something special.
Pioneer Woman's best ever coffee cake to the rescue! 
The picture is hers too.
It's in our oven now and everyone in the house is counting down the minutes.
The cinnamon smell is so delicious.

Dinners for this week:
Sunday - Leftovers for the boys.  The girls will be at a baby shower.
Monday - Food truck Monday!
Tuesday - Grilled hot dogs and burgers, corn on the cob and a big green salad before tball.
Wednesday - Pesto pasta, with cherry tomatoes and grilled chicken on the side.
Thursday - Taco night.
Friday - Grilled pizza.
Saturday - Movie in the park.  I'm thinking picnic style dinner with lots of fruit and salads.

2013 Week 23

I took my little cowboy and cowgirl to the farm to play this week.
Horseback riding, zip lines, feeding sheep and goats.
Chasing chickens, playing on hay bales, and good friends. 
It was the perfect summer day.

And then reality hits and we have to eat dinner again!
Sunday - Scott grilled pizza with a new crust recipe.  So good.
Monday - Probably leftovers.  We have pizza galore!
Tuesday - First t-ball game!  Dinner will the grilled hot dogs, corn on the cob and fruit.
Wednesday - Either a cold pasta salad or pesto pasta.
Thursday - Breakfast for dinner, always a hit.
Friday - Fish tacos and quesadillas on the grill.
Saturday - Dinner with friends.

2013 Week 22

I planted three new lilac bushes last year and have managed to kill of two of them already.
Not good since the guy at the nursery told me they are pretty hardy.
Anyway, I came home this week and Scott had surprised me with two new, bigger bushes.
They are beautiful and already in bloom. 
Cross your fingers that I can keep these alive!

Meals for the week are still tough.  It's been so hot that nothing sounds good.  But I'm hoping that with all the yummy produce in the stores and farmers markets now that we'll be more inspired.
Sunday - Pasta with grilled veggies and chicken.
Monday - BBQ-ing.  And making this yummy salad.
Tuesday - T-ball night, dinner will be something easy for the kids (hot dogs, grilled quesadillas) and Scott and I will eat after.
Wednesday - Green noodles (pesto).
Thursday - Another tee ball night, i'll do it picnic style this time.  This tortellini salad is really good and easy to transport.
Friday - Homemade grilled pizza.
Saturday - Dinner out.

2013 Week 21

Our little town has a hot air ballon launch on the morning on the town fair.
 We tried to go last year, but the weather was bad.
 This year however, beautiful weather and a very fun morning. 
 I heard that 31 balloons went up, so fun to see.

Sunday - I am coaching, so I think Scott and the kids are going out.
Monday - Grilling
Tuesday - Leftovers
Wednesday - Fish sticks and salad
Thursday - Grilled salmon Caesar salad
Friday - Pizza on the grill
