2015 Week 52

Oh my, how is it the last week of 2015.
I know that I say this every year,
and I know it makes me sound so old,
but HOW did it go so fast?



Christmas and the holidays were so amazing,
I think we had smiles on our faces the whole week.
And of course, the week was full of amazing food and friends.

Dinner this week:
Sunday - Scott and I have both been feeling run down. I think a hot and sour soup is needed.
Monday - The Broncos are playing tonight, so game food it is. Baked potato bar with a green salad.
Tuesday - Grilled cheese with homemade tomato soup and a green salad.
Wednesday - Rainbow peanut noodles with a fruit salad.
Thursday - New Year's Eve! We're planning on a fun night in with take out Pho and ice cream sundaes with sparkler candles.
Friday - Happy New Year! Hoppin' Johns with cornbread and honey.
Saturday - Here's to homemade pizza with lots of veggies and tucking in for a family movie.

2015 Week 48

These two are such sweet friends.

It's a really fun week around here.
Filled with girls' nights, and trains with Santa, and a sweet boy's birthday party.

Sunday - Leftover soup and bread.
Monday - Spaghetti with a salad and fruit.
Tuesday - Breakfast for dinner! Eggs, potatoes, fruit and waffles.
Wednesday - Santa train time! With dinner after in Idaho Springs.
Thursday - Holiday happy hour with dear friends.
Friday - Homemade pizza and a movie night.
Saturday - An easy dinner after a little guy's birthday party!

2015 Week 47

This is a fun time of year, with lots of memories to be made.
 This is the face of someone who just spotted a fire truck in our town's parade of lights.
 Our tree is up!
Nevermind that I made Scott move the whole thing to a different spot AFTER we decorated it!

Monday - Grilled salmon with sautéed spinach and quinoa, served with fruit on the side.
Tuesday - Stir fry over kale with fruit on the side.
Wednesday - Curried carrot soup with a green salad and fresh bread.
Thursday - Mushroom stroganoff with a green salad and fruit.
Friday - Homemade pizza and a movie night.
Saturday - It's our neighborhood holiday party!

2015 Week 46

The kids had an early release day yesterday and we spent the afternoon at the movies!
We saw the Peanuts movie and it was so so cute. 
I highly recommend it to anyone with small kids.
All three of mine were highly entertained and everyone left with smiles on their faces.

Dinners this week:
Sunday - Chili and cornbread.
Monday - Baked salmon with polenta and roasted brussels sprouts.
Tuesday - Chicken thighs with veggies in the slow cooker.
Wednesday - Spaghetti with fresh bread and pineapple.
Thursday - Homemade mac and cheese, sauteed kale, and pineapple.
Friday - Dinner with friends after the parade of lights in our little town.
Saturday - Homemade pizza night.

We have a little darling joining our family in a few short weeks!
The kids are so excited and can't wait until he comes home with us.

Sunday - Veggie tortilla soup with quesadillas. 
Monday - Shrimp and broccolini stir fry.
Tuesday - Lentil butternut squash curry and naan.
Wednesday - Beans and greens, fruit and bread.
Thursday - Scotts out for the night, so we are having grilled cheese and tomato soup!
Friday - Pizza and a movie night.
Saturday - Scott's birthday! We're having dinner out!

Friday - I'm out for the night, kids and Scott are having pizza and watching the CU game.

2015 Week 42



These three little loves had a fantastic Halloween weekend!
L and I ran a 5k together (his first!) on Saturday AM,
then hit Pearl Street in Boulder for the Munchkin Masquerade,
then trick or treating with friends on Saturday night.
On Sunday we went to the zoo and ended up being able to enjoy 
Boo at the Zoo and more trick or treating!
Whew, mama is spent!

Luckily for us all, our week is looking mellow, which sounds perfect!

Dinners this week:
Sunday - game night! Leftover chili and mac and cheese.
Monday - Enchiladas from the freezer, homemade chips, stir fried veggies. 
Tuesday - Spaghetti, veggies, salad and garlic bread. 
Wednesday - Minestrone soup and fresh bread. 
Thursday - Breakfast for dinner! Eggs, potatoes and pancakes.
Friday - Homemade pizza and a movie.
Saturday - Dinner with friends.

Saturday - Happy Halloween! Dinner and trick or treating with friends.

Saturday - Fall Harvest party with friends. I'm making this salad and these for dessert.

2015 Week 39

Holy Guacamole fall is beautiful.

Sunday - Dinner with friends after the Bronco game.
Monday - Baked ziti with garden greens.
Tuesday - Taco Tuesday! 
Wednesday - Salmon cakes with slaw, fruit, and homemade bread.
Thursday - Easy mac and cheese with butternut squash and a fruit salad on the side.
Friday - Going to the cabin with friends, making spaghetti, meatballs, garlic bread, and salad.
Saturday - Cabin time!

2015 Week 38

 We attended a fall fest in our little town this weekend.
In addition to all the usual activities (pumpkin launch, hamster balls, haunted house, crafts)
there was a bubble machine.
It was this industrial sized thing that created a mountain of bubbles.
The kids had the best time, running in and out of it, 
creating beards and gloves and boots out of bubbles.
So fun.

Dinners this week:
Sunday - Chili and potato wedges with friends after the Bronco game.
Monday - Grilled fish tacos with salad and garden tomatoes.
Tuesday - Tacos!
Wednesday - Spaghetti and salad.
Thursday - Grilling.
Friday - Family photos tonight. Either an easy mac and cheese dinner or grabbing something out.
Saturday - Homemade pizza night.

Thursday - Grilled fish tacos.

2015 Week 36

Our sweet girl had such a fun birthday week.
She requested a rainbow cake (again) and I wanted to do something different.
I found the idea for this baby on Pinterest (of course) and it was a hit!!

Sunday - Easy mac and cheese and garden veggies.
Monday - Ribs, mashed potatoes and sauteed zucchini.
Tuesday - Taco Tuesday! Always a hit!
Wednesday - Grilled salmon, brussels sprouts, bread.
Thursday - Sweet potato hash with a fruit salad, yum!
Friday - Pizza night (dinner out for me!)
Saturday - Grilling burgers and veggies.

Pumpkin Nutella Muffins (High Altitude, Whole Wheat, Low Sugar)


The start of school around here means fall,
and for me, fall means baking with pumpkin. 
These Pumpkin Nutella Muffins hit the spot on a Sunday morning.

Ingredients: 
1 cup whole wheat pastry flour
1 cup all purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1 cup Pumpkin
1 egg
1/2 cup whole milk
5 Tbs butter, melted
1/4 cup packed brown sugar
Nutella

Directions:
1. Mix all the wet ingredients together in a bowl with a wooden spoon.
2. Add all dry ingredients to bowl and mix well.
3. Spray the muffin tin or add muffin liners and divid dough (we usually get 11 muffins).
4. Take a baby spoon and add a dollop of Nutella to the top of each muffin. Then take a toothpick and swirl the Nutella into the muffin dough.
5. Bake muffins at 375º for 18-20 minutes.
6. Let cool and enjoy.

2015 Week 33


Well, the start of school and the end of summer have kicked our booties!
So much to get done, so many places to be and no dinners planned.
It was a week or two of flying by the seat of our pants and 
I'm hoping to turn the ship around this week!

Sunday - I'm having dinner out. The kids and Scott are having pork chops, mashed potatoes and greens.
Monday - Spaghetti with a green salad and breadsticks.
Tuesday - Easy dinner of homemade mac and cheese and nuggets, fruit and greens.
Wednesday - Crockpot veggie curry with brown rice and fruit.
Thursday - Peanut noodles with tofu. 
Friday - Pizza night, TGIF!
Saturday - Grilling out with friends.

 we visited the county fair, 
and had some fun with glow bubbles.

2015 Week 28

These summer weekends are fun!

Dinners this week:
Sunday - Pizza tonight. We still have dough to use. I think a farm stand tomato and garden basil margarita pizza is in order! After we celebrate National Ice Cream day of course!
Monday - Easy mac and cheese and green veggies.
Tuesday - Food truck night! Simple picnic dinner for the kiddos.
Wednesday - Spaghetti, green salad, fruit, and garlic bread. The little man has prelims for summer swim league the next morning and he will need some carbs!
Thursday - Grilling!
Friday - Summer veggie burritos, yum! With guac and red rice. Served with fruit.
Saturday - Dinner out with friends.

2015 Week 27

Look at this little walker!
We celebrated both my mom and my sister's birthday this weekend
at the Denver Botanic Gardens.
We brought in a picnic, had birthday cupcakes,
and wandered all over the gardens.
It was a really a nice birthday party.

2015 Week 26

This crew had a very happy 4th of July weekend!

We visited the Cherry Creek Arts Fest with cousins.

Had a patriotic breakfast.

Went to Nederland and road on the Carousel of Happiness and watched a parade.


 This dude took his first steps!

And, of course, we had plenty of ice cream!

Overall, not a bad weekend!

Dinners this week:
Sunday - Grilling with friends and watching the Women's World Cup Final.
Monday - Spicy pasta salad with a green salad and fruit.
Tuesday - Taco Tuesday! Meet and bean tacos for the the kiddos and Scott, black bean and sweet potato tacos for Scott and me. Lots of guac too!
Wednesday - Something easy, maybe a grilled cheese and tomato soup night.
Thursday - Baseball game night. An early dinner of chicken, mac and cheese, and fruit for the kiddos. Scott and I will have grilled salmon and green salad after.
Friday - Homemade pizza night, the summer version.
Saturday - Birthday picnic at the Botanic Gardens to celebrate my mom's birthday and my sister's birthday this week! We're packing sandwiches, chips, fruit and cupcakes.

2015 Week 25

We found this fun playground in Boulder the other day.
It was a giant rock/cave thing with tons of little tunnels.
The kids loved it, crawling through caves and tunnels.

Sunday - Grilling out with friends.
Monday - Leftovers.
Tuesday - Green noodles and fruit.
Wednesday - Sandwiches and fruit. 
Thursday - Grilling veggies and burgers.
Friday - Dinner out.
Saturday - Happy 4th! We're grilling out and watching fireworks with friends.

2014 Week 24

We had one of those packed to the gills, too much fun, too little time weekends.
All kinds of summer fun including swim meets, block parties, birthday parties, sparklers,
golfing, celebrating dads, swimming, BBQing, and tons of yummy food.
I'm so happy and thankful for our friends and family and this fun time in our lives.

We're not slowing down much this week with swim team, baseball, parties, and more fun!

in Lake George.

2015 Week 21

Scott made this super delicious pizza the other night for homemade pizza night.
Roasted portabello mushrooms, caramelized onions, spinach and brie. 
I've said it before, but he's getting good at this!

Dinners this week:
Sunday - Leftover pizza and salad.
Monday - Pesto pasta, tomatoes, and fruit.
Tuesday - Taco Tuesday! Traditional tacos with all the fixings, with fruit on the side.
Wednesday - Baseball is starting. I'm making a tortellini greek salad and getting a rotisserie chicken.
Thursday - Scott and I have a concert at Red Rocks, the kids are eating with Nana.
Friday - Homemade pizza night, yum yum. Served with salad and fruit.
Saturday - Grilling out to celebrate L's first summer swim meet. Burgers, corn, artichokes, and fruit.

Wednesday - Easy pasta with garlicky broccoli raab, fruit and bread.
Thursday - Rainbow quinoa salad and grilled chicken.
Friday - Homemade pizza night (pear, gorgonzola, and arugula) 
Saturday - Leftovers or dinner out.

We spent a fun filled weekend in Breckenridge.
Lots of swimming, sledding, swimming, and eating!

2015 Week 16

This little one got a new dress and sandals this weekend.
The temps aren't cooperating, but she's ready for summer!

We're heading up to Breck this weekend and it should be a fun time.
The slopes are closed and it's not warm yet, so it's a strange time to go
but we are looking forward to spending lots of time in the pools and hot tubs,
playing games and sledding.

Mile High Morning Muffins


 These hearty muffins are full of fruits, veggies, nuts and seeds.
They are perfect for breakfast on a school morning, or a cool morning, or after school, or after dinner.
Basically, they are perfect for anytime!

Let's get started:

Preheat the oven to 375°F. Lightly grease a 12-cup muffin tin, or line it with papers and spray the insides of the papers.

In a small bowl, cover 1/2 cup raisins with hot water, and set them aside to soak.

Core one large apple and about three carrots and pulse them in the food processor until they are finely chopped.

Next, stir together the following in a mixing bowl:

1 cup whole wheat flour
1 cup all purpose flour
1/2 cup brown sugar
1 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt

Drain the 1/2 cup raisins and add them to the bowl, along with the chopped apple and carrots, plus the following:

1/2 cup unsweetened shredded coconut
1/4 cup sunflower seeds
1/4 cup chia seeds

Stir to combine.

Whisk together the following:

3 large eggs
1/3 cup melted butter
1/3-1/2 cup apple sauce (I used an apple carrot baby food pouch)
2 teaspoons vanilla extract

Add to the flour mixture, and stir until evenly moistened. You’ll have a fairly loose (though chunky) batter.

Divide the batter into the 12 muffin cups, fill the cups generously to get a nice rise on the muffin.

Bake for 25-28 minutes. Let the muffins cool in the pan for 5 minutes, then on a rack.

They are delicious warm or room temperature and my kids loved them for snacks after school on a rainy Thursday. Enjoy!

Tuesday - Black bean and sweet potato taquitos with guacamole and salsa for dipping. A Mexican corn salad on the side. 
Wednesday - Homemade fish sticks with oven fries and roasted broccoli. 
Thursday - Breakfast for dinner. Blueberry ricotta pancakes, eggs, bacon and fruit.
Friday - Homemade pizza and salad.
Saturday - Dinner with friends.
