2013 Week 5

I'm really trying to enjoy these last few months of mornings with my little man.
We have just registered L for full day kindergarden and that means that our mornings spent 
digging for fossils will be coming to an end.  
Even though that's eight months away, I still find myself tearing up at the thought.

Dinners this week:
Sunday - Hot dogs on the grill and veggie sides.
Monday - Something easy, maybe a baked pasta with a salad.
Tuesday - Chickpea curry on a cold night.
Wednesday - Soup and fresh bread.  Either tomato or chili corn chowder.
Thursday - Chipotle sweet potato and black bean tacos, with 'dillas and guac for the kids.
Friday - Homemade pizza night!  We're coming up with new combos, but last week's caramelized onion, zucchini and mushroom will be hard to beat.
Saturday - Dinner out!

2013 Week 4

We had a fun day at the mall with the kids picking out reward toys for potty training and being a good big brother!
After shopping we had lunch at Nordy's with my mom.  My mom and I shared the most delicious salad of spinach, lentils, beet chips and zucchini.  So yummy!
I think I still had lentils on the brain when I got home because the yummy swiss chard rolls are full of them!

This week's menu:
Sunday - Scott's veggie fried rice.
Monday - Dinner out with friends.
Tuesday - Swiss chard rolls, speaking of lentils :)
Wednesday - Homemade soup and grilled cheese.
Thursday - Taco night.
Friday - Homemade individual pizzas.
Saturday - Grilled fish with roasted mushrooms and a green veg.

2013 Week 3

It's a sad day around our house today, the Broncos are out of the running, 
after losing terribly last night.  Such a heart breaker.
This is pretty much how Scott felt after the game.

Anyway, life goes on and there's always next year (blah blah blah).

Sunday - Burritos with leftover enchilada fillings.
Monday - Browned butter gnocchi with broccoli and nuts (from cooking light mag).
Tuesday - School meeting tonight, we will need a quick and easy dinner when we get home.  Maybe just an easy pasta with spinach.
Wednesday - Tomato soup and grilled cheese.
Thursday - Dinner for breakfast, maybe a frittata.
Friday - Veggie and tofu stir-fry (also from cooking light)
Saturday - Pizza!

2013 Week 2

It's been such a fun and calm start to the new year! 
 L started school on Friday and H and I are back in the swing of things.

We've been baking and making dinners together, H and I and she's quite the helper!

For some reason I'm struggling with dinners this week.  Here's what I've come up with so far:
Sunday - I'm coaching, meatballs and mashed potatoes for Scott and the kids!
Monday - Black bean spinach enchiladas, yum.
Tuesday - mmm, creamed kale and eggs.
Wednesday - Roasted garlic pasta salad or homemade mac and cheese with veggies thrown in.
Thursday - Homemade pizza night returns. 
Friday - Something on the grill, maybe fish, maybe black bean burgers. Sweet potato fries too!
Saturday - We are having friends over for the Bronco game, I'm making chili for all!
