How it can be December and 60º+ in Colorado is beyond me.
This certainly wasn't happening when I was growing up here.
But these sunsets were, and never fail to impress.
Our week is mellow, but we leave Saturday for a big family vacation so there's a lot to get done.
Sunday - Leftovers or dinner out with friends.
Monday - Kitchen sink quesadillas, trying to use up items in the veggie drawer!
Tuesday - Grilled fish and an orzo dish on the side.
Wednesday - Meatballs and mashed potatoes for the family while I'm coaching.
Thursday - Kids choice, no clue yet, but I'm sure they will come up with something good!
Friday - Probably pizza or eating out while packing frantically.
Saturday - Vacation time! Dinner on the plane, and lots of packed snacks.
